“Tis the season to eat chocolate! There are a variety of wonderful chocolate books that are new and fun to help you make Valentine’s treats.
MAST BROTHERS CHOCOLATE: A Family Cookbook by Rick Mast & Michael Mast is from the brothers that pioneered the bean-to-bar craft chocolate movement. Sourcing cocoa from around the equator, they roast the beans in small batches to create truly handmade chocolate. In this new cookbook they share their unique story and recipes for classic American desserts like: chocolate butter ganache squares; chocolate caramels with sea salt; chocolate chip & ricotta pancakes; and even a chocolate egg cream!
SERIOUSLY BITTER SWEET: The Ultimate Dessert Maker’s Guide to Chocolate by chocolate expert Alice Medrich is a winner! Ms. Medrich presents 150 fail-safe chocolate focused recipes for ice cream, brownies, cookies, and special bites. The sidebars, which she calls “chocolate notes,” are amazingly informative as are her tips on which chocolate percentage works best for each recipe. Standouts include: molten chocolate-raspberry cakes; fallen chocolate soufflé cake; melting chocolate meringues; and bittersweet decadence cookies.
SWEET: Inspired Ingredients, Unforgettable Desserts by Valerie Gordon of Valerie’s Confections in Los Angeles’ Silver Lake district, is another sure-fire dessert cookbook from a master baker. The gorgeous color photographs made me pant with anticipation. The recipes are carefully explained and explicit in directions. Her Blum’s coffee crunch cake is a marvel as is her Chasen’s banana shortcake; and Bullock’s Wilshire coconut pie. But, don’t miss the Valentine’s Pie, which is sure to be a winner this month!
