Yogurt and Spiced Apple Salad

Serves: 6
  • 1/4 Cup nonfat plain yogurt
  • 1/4 Cup unfiltered unsweetened apple juice
  • 1 Tablespoon raisins or currants
  • 1 Tablespoon sunflower seeds
  • 1 Tablespoon coconut flakes
  • 1 Tablespoon fresh lime juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 4 Golden or Red Delicious apples
  1. In a mixing bowl, combine the yogurt, apple juice, raisins, sunflower seeds, coconut, lime juice, vanilla, and cinnamon.
  2. Core the apples and cut into thin wedges or bite-size pieces. Toss the apples in the yogurt mixture and refrigerate for at least 30 minutes before serving.
This recipe yields 6 servings.
