Wild Rice Pancakes

Serves: 4
  • 2 Cups flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 3 Tablespoons sugar
  • 1 egg
  • 1 1/2 Cups milk
  • 1/3 Cup oil
  • 1 Tablespoon sour cream
  • 3/4 Cup cooked wild rice
  1. Mix flour, salt, baking powder and sugar. Set aside. Beat eggs; add milk,oil, sour cream and wild rice. Add to dry ingredients. Batter will be lumpy. Cook on heated griddle. ALTERNATIVE: Add 1 cup cooked wild rice to your favorite pancake mix. Makes 12-14 pancakes.

Serve traditionally with butter and maple syrup or with apple sauce. These go well with berry coulis or fruit flavored syrups. You may also wish to try it simply with an herbed butter or sour cream and no syrup.
