Truthfully, these are not pies, but cookies. Nevertheless, Whoopie Pies are so much fun to make and eat, we just had to include them. Enjoy with a glass of milk for a great afternoon snack.

  • 1/2 Cup shortening
  • 1 Cup sugar
  • 1 egg
  • 1 Cup milk
  • 1 teaspoon vanilla
  • 2 Cups flour
  • 1/2 teaspoon salt
  • 1/2 Cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 Cup shortening
  • 1 Cup powdered sugar
  • 1 Cup Marshmallow Fluff
  • 1/2 teaspoon vanilla
  • a few drops of milk
  1. Cream shortening and sugar. Mix in egg, milk, and vanilla. Sift dry ingredients together and add. Drop by teaspoonful on a cookie sheet, flatten with the bottom of a glass and and bake for 8 minutes.
  2. Cool and put filling between cakes.
  3. Makes 3 dozen pies.
Despite their name, these are actually chocolate cake-like cookie sandwiches spread with a filling.
