Welsh Soda Cake (Welsh)
Recipe type: Breads and Rolls
Serves: 1 cake
  • 1 pound flour
  • 4 ounces butter
  • 8 ounces castor sugar
  • 8 ounces currants
  • 1 egg
  • 1/2 Cup sour milk
  • 1 teaspoon bicarbonate of soda
    Rub the butter into the flour and add the sugar and fruit.
  2. Beat the egg well and add to the mixture. Dissolve the bicarbonate of soda in 1 tablespoon of milk. Mix in the rest of the milk. Add the bicarbonate in the milk just before putting the cake in the oven.
  3. Place in a greased tin and cook in a hot oven (425/F. or Mark 7) for 30-40 minutes.
