These delightful cakes are served for tea time or breakfast throughout Wales and the West Midlands. Simple to make, and wonderful served with lightly salted butter or eaten plain alongside a cup of tea.

Welsh Cakes (Welsh)

Serves: 12 cakes
Ingredients
  • 1 pound flour
  • 1/2 teaspoon mixed spice
  • 4 ounces butter
  • 1 teaspoon baking powder
  • 4 ounces lard
  • 1 egg
  • 4 ounces currants
  • 1 pinch salt
  • 6 ounces sugar
  • 2 Tablespoons milk
Instructions
  1. PICAU AR Y MAEN
  2. Sift the flour, baking powder and salt together.
  3. Rub in the fat and add the other dry ingredients. Beat the eggs lightly and add with enough milk to make a firm paste. Roll out on a floured board to a thickness of 4 inch and cut into rounds.
  4. Cook on a greased griddle for about 3 minutes on each side, until golden-brown.
  5. Cool and sprinkle with sugar.

Serve alone or with butter.
