A treasure of Southern cooking, this delightful relish makes a great accompaniment to fried chicken or barbecue.

Vidalia Onion Relish

Serves: 1 quart
Ingredients
  • 2 pounds sweet onions (vidalias), chopped
  • 2 stalks celery, sliced
  • 1 sweet red pepper, chopped
  • 1 Tablespoon butter, melted
  • 3/4 Cup cider vinegar
  • 1/4 Cup water
  • 2 Tablespoons brown sugar
  • 1 teaspoon celery seeds
  • 1/4 teaspoon salt
Instructions
  1. Saute onions, celery, and red pepper in butter in a small Dutch oven 15 minutes or until tender. Add vinegar and the remaining ingredients to the mixture. Bring to a boil; reduce heat and simmer uncovered 20 minutes. Store in refrigerator.
  2. Serve chilled or at room temperature.
