Serves: 1 1/4 Cups
Ingredients
  • 2 eggs; separated
  • 1/2 Cup sugar
  • 1/2 Cup milk
  • 2 Tablespoons flour
  • 1 teaspoon vanilla extract, plus vanilla extract to taste
Instructions
  1. In the top pan of a double boiler, combine egg yolks, sugar, milk, flour, and 1 teaspoon vanilla. Whisk to blend, then place over gently boiling water and cook, stirring, until mixture is thickened and coats the back of a spoon. Remove from heat and let cool to room temperature.
  2. In a bowl beat egg whites until stiff peaks form. Gently fold egg whites into custard.
  3. Add vanilla to taste.
Notes
Yield: 1-1/4 cups.
