- 2 eggs; separated
- 1/2 Cup sugar
- 1/2 Cup milk
- 2 Tablespoons flour
- 1 teaspoon vanilla extract, plus vanilla extract to taste
- In the top pan of a double boiler, combine egg yolks, sugar, milk, flour, and 1 teaspoon vanilla. Whisk to blend, then place over gently boiling water and cook, stirring, until mixture is thickened and coats the back of a spoon. Remove from heat and let cool to room temperature.
- In a bowl beat egg whites until stiff peaks form. Gently fold egg whites into custard.
- Add vanilla to taste.
