An extraordinary classic from Greece, this recipe goes well with chicken, vegetables or bread as either a dip or spread.

Tzatziki

Ingredients
  • 4 Cups yogurt, unflavored
  • 4 cloves garlic, crushed
  • 2 medium cucumbers, seeded and finely diced
  • 2 Tablespoons olive oil
  • 1/2 teaspoon dried dillweed or,
  • 3 Tablespoons fresh lemon juice
  • 1 Tablespoon finely chopped fresh dill
  • salt and pepper to taste
Instructions
  1. Place a piece of cheesecloth in a colander and pour in the yogurt.
  2. Drain for several hours. Place grated cucumber in another colander and allow to drain for 2 hours. Mix together all ingredients, chill.
  3. Drizzle additional olive oil on top. Serve as a dip for vegetables, or a spread for bread.
