Turkey Saltimbocca

Serves: 4
  • 2 Tablespoons unsalted butter
  • 2 turkey cutlets; 3/8 inch thick
  • 4 slices prosciutto; folded in half or 2 thin slices
  • 4 slices Muenster cheese
  • 8 sage leaves, fresh, julienned
  1. In large skillet, melt butter over medium-high heat. Sprinkle cutlest with 1/8 teaspoon pepper; add to hot butter, pepper side down. Cook 1 minute.
  2. Turn over; top with prosciutto, cheese and sage. Cover and cook 1 minute or until cheese melts.
