Turkey or Chicken Tetrazzini I

Ingredients
  • 1/2 Cup butter
  • 3 Cups sliced turkey or chicken
  • 1/8 teaspoon pepper
  • 2 Cups chicken / turkey broth
  • 1/2 Cup canned sliced mushrooms
  • 1 Cup light cream or evaporated milk
  • 1 8 ounce package dry pasta
  • 1 Cup shredded sharp Cheddar
  • 1/4 Cup flour
  • 1 teaspoon salt
Instructions
  1. Melt butter in skillet and add mushrooms and cook for 2 minutes. Add flour, broth, cream, salt, and pepper.
  2. Cook over low heat, stirring until thickened.
  3. Butter a 2-quart casserole dish; in a large bowl mix turkey and mushroom cream mixture together with pasta.
  4. Put 1/2 of the cheese in with this mixture. Put into casserole dish and sprinkle rest of cheese on top.
  5. Bake in a 400-degree oven for 20 minutes or until hot and bubbly.
  6. Can be made in advance and frozen.
  7. Yield 8 servings.
