The Miser's Feast (Welsh)
Recipe type: Pork
Serves: 4
  • 1 1/2 pounds potatoes
  • 1/2 pound onions
  • 1 pound Welsh bacon rashers or ham
  • salt and pepper
  2. Peel and slice the potatoes and onions. Place in salted water and bring to the boil. Then add the slices of bacon or the piace of ham. Add pepper to taste.
  3. Cover and simmer for 1 1/2 to 2 hours. Drain and serve hot or cold.
