An outstanding sauce to accompany crabcakes or poached lobster or shrimp, this richly flavorful concoction brightly enhances the flavors of seafood. Simply glorious.

Tarragon Sauce
Recipe type: Sauces
Serves: 1 batch
  • 1/4 Cup fresh tarragon leaves
  • 1/4 pound butter
  • 1 Tablespoon tarragon vinegar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon white wine
  1. Combine ingredients, heat, and serve over crabcakes (see separate recipe). Chopped parsley and chives may be added if desired.
