Ingredients
  • 3/4 Cup water
  • 1/4 Cup fresh-squeezed orange juice
  • 1/2 Cup couscous
  • 1 teaspoon finely grated orange zest
  • 2 Tablespoons finely chopped blanched almonds
  • 1 Tablespoon honey
  • 1 Tablespoon frozen apple juice concentrate
  • 1 dash ground cinnamon
Instructions
  1. Combine all of the ingredients in a 1-quart microwaveable casserole dish. Cover. Microwave on high until the liquid is absorbed and the couscous is tender, 5 to 6 minutes. Let stand, covered, for 1 minute more.
