Stuffed Roast Grouse

Serves: 2
  • 1 grouse; dressed
  • lemon juice
  • bacon strips
  • flour; for dusting
  • Mushroom Stuffing:
  • 1/2 Cup chopped mushrooms
  • 1/2 Cup bread crumbs
  • 1 Tablespoon butter
  • 1 teaspoon parsley
  • 1 teaspoon grated or diced onion
  • salt, to taste
  • freshly-ground black pepper, to taste
  1. Rub grouse with lemon juice inside and out. Stuff with mushroom stuffing. Cover grouse breast with bacon. Bake at 450 degrees for 10 minutes. Reduce temperature to 350 degrees, and bake for a further 25 minutes. Remove, dust with flour , bake a further 10 minutes at 450 degress.
