A wonderful tradition, Stollen is a German bread full of deep, rich flavors. Coated in sugar, this delectable confection is perfect with afternoon tea or an evening cup of hot cocoa.

  • 3 1/2 Cups milk
  • 2 envelopes yeast
  • 4 Cups flour
  • 2 Tablespoons sugar
  • 2 teaspoons salt
  • 2 Cups shortening
  • 3 eggs -or-
  • 5 egg yolks
  • 6 Cups flour
  • 1 1/2 Cups sugar
  • 2 ounces Brandy
  • 1 pound raisins
  • 1/4 pound dried apricots
  • 1/2 teaspoon cardamom
  • 1 pound pecans or almonds
  • 1/2 pound citron
  • 3 pounds mixed glace fruits
  • 1/2 pound marrons glace (candied chestnuts)
  • 2 teaspoons grated lemon rind
  • 1 Cup flour
  • powdered sugar, for topping
  1. Scald milk. Soak the envelopes of yeast in 1/2 Cup lukewarm water for ten minutes. Add milk, 4 Cups flour, 2 Tablespoons sugar, salt and make a sponge of these ingredients in a large bowl. Let rise until double in bulk.
  2. Cream shortening, eggs, 1 1/2 Cups sugar and brandy, and add to sponge mixture after rising.
  3. Mix in 6 Cups flour.
  4. Chop remaining ingredients and dust with 1 Cup flour.
  5. Knead after adding fruits and nuts. Let rise again until double in bulk.
  6. Punch down, divide into 6 parts; roll each into 1: round.
  7. Brush with melted butter, sprinkle with cinnamon and sugar.
  8. Fold over as for a Parker-House roll. Rise until double in size.
  9. Bake at 325 deg F. for 45 minutes.
  10. Let cool and dust heavily with powdered sugar.
