Spooned-Up Meat Loaf

Ingredients
  • 2 pounds lean ground beef
  • 1/2 Cup oats; quick cooking
  • 1/2 Cup dairy sour cream
  • 1/4 Cup Parmesan cheese; grated
  • 1 1/2 ounces onion soup mix; 1 packet
  • 1/2 Cup water
  • 2 eggs; large, beaten
Instructions
  1. Cook and stir the meat in a large skillet until the meat is brown. Drain off the excess fat. Stir in the soup mix, oats and water. Cover and simmer for about 5 minutes, stirring occasionally. Stir in the sour cream and eggs.
  2. Spread the mixture evenly in the skillet then sprinkle the cheese over the top. Cover and simmer until set, about 5 minutes.
  3. Serve with catsup, if desired.
