Spinach and Bean Gratin

Serves: 4
  • 1 Tablespoon sunflower oil
  • 1 onion
  • 225 g daikon radish, small
  • 400 g chopped tomatoes
  • 400 g cannellini beans
  • 225 g frozen spinach
  • 1 teaspoon ground cumin
  • 1 Tablespoon fresh chopped thyme
  • 100 g breadcrumbs
  • seasoning
  1. Preparation: Chop the onion an halve the radish lengthways and slice into semi circles.
  2. 1. Preheat the oven to 200 degrees C/400 degrees F/gas 6. Heat the oil in a large pan and fry the onion and radish together for 5 minutes until softened.
  3. Add the tomatoes, cannellini beans, spinach, cumin, and thyme. Add seasoning to taste and simmer for 5 minutes.
  4. Transfer the mixture to an ovenproof casserole dish, top with breadcrumbs and bake for 25 minutes until golden.
