A very delightful sandwich made with thinly sliced deli chicken instead of turkey, prepared with Swiss and Cheddar cheeses and bacon. A great meal for luncheon or anytime.

Serves: 4
  • 12 slices bread, toasted
  • 1 mayonnaise dressing
  • 2 slice natural sharp Cheddar cheese, cut in half
  • 1 package deli-thin roast chicken breast (6 ounce)
  • lettuce
  • 2 slices natural Swiss cheese, cut in half
  • 8 slices tomato
  • 12 slices bacon, crisply cooked and drained
  1. For each sandwich, spread 3 toast slices with dressing. Cover 1 toast slice with cheddar cheese, chicken, lettuce and second toast slice.
  2. Top with Swiss cheese, tomato, bacon and third toast slice. Cut into quarters; secure with toothpicks.
  3. Makes 4 sandwiches.
