Southwestern Cilantro Pesto
Recipe type: Sauces
Serves: 8
  • 2 Cups fresh cilantro leaves
  • 3/4 Cup extra virgin olive oil
  • 1/4 Cup pine nuts; toasted
  • 6 cloves garlic
  • 1 Tablespoon lime juice; juice of 1/2 lime
  • 1 Cup Parmesan cheese; grated
  • 1 Tablespoon salt
  1. Place all ingredients in a blender and blend until smooth.
An excellent dressing for sandwiches, sauce for wagon-wheel pasta, topping for grilled chicken, fish or pork or Mexican pizza.
