The aromatic flavor of cilantro is matched wonderfully with lime, pine nuts and Parmesan in the Southwestern Pesto. Simply delicious on pasta, fish or chicken.
- 2 Cups fresh cilantro leaves
- 3/4 Cup extra virgin olive oil
- 1/4 Cup pine nuts; toasted
- 6 cloves garlic
- 1 Tablespoon lime juice; juice of 1/2 lime
- 1 Cup Parmesan cheese; grated
- 1 Tablespoon salt
- Place all ingredients in a blender and blend until smooth.
