Shearing Cake
Recipe type: Cakes
Serves: 1 cake
  • 1 pound flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 2 pint milk
  • 8 ounces butter
  • 1 pinch grated nutmeg
  • 12 ounces sugar
  • 1 rind of 1 lemon
  • 2 teaspoons caraway seeds
  2. Rub the butter into the flour and add the other dry ingredients. Mix thoroughly.
  3. Beat the eggs. Stir the eggs and milk into the flour mixture.
  4. Bake in a tin lined with greaseproof paper. Bake in a moderate oven (350/F. or Mark 4) for 30 minutes and then at 300/F. or Mark 2 for a further 12 hours.

Hot cream tea would go well.
