Ingredients
  • 2 fennel bulbs, thinly shaved
  • 3 ounces dry aged Parmesan cheese, thinly shaved
  • 11 ounces green olives in oil, crushed and stone removed
  • 3 Tablespoons extra virgin olive oil
  • juice of 1/2 lemon
  • 1 teaspoon anchovy paste (or 4 canned anchovies smashed with a fork)
  • sea salt
  • freshly ground black pepper
Instructions
  1. Whisk together the olive oil, lemon juice and anchovy paste.
  2. Arrange the shaved fennel, Parmesan and olives on a large serving plate. Drizzle with the dressing and serve.
