Roast Pork and Black Beans on Rice with Zesty Herb Salad

Ingredients
  • Roast Pork and Black Beans on Rice:
  • 1 (17-ounce) package fully cooked pork roast
  • 1 (15-ounce) can seasoned black beans (undrained)
  • 2 Tablespoons sofrito (Spanish cooking sauce)
  • 1 1/2 Cups water
  • 1 Tablespoon extra-virgin olive oil
  • 2 Cups instant rice
  • 1/2 teaspoon salt
  • 1 onion (rinsed)
  • Zesty Herb Salad:
  • 10 ounces European salad blend
  • 3?5 sprigs fresh cilantro (rinsed)
  • 1 small red bell pepper (rinsed)
  • 1 Cup grape tomatoes (rinsed)
  • 1/2 Cup matchstick carrots
  • 1 Tablespoon cooked bacon pieces
  • 1 lime (rinsed)
  • 2 Tablespoons Italian salad dressing with cheese
Instructions
  1. Roast Pork and Black Beans On Rice
    1. Place pork roast (including juices) in microwave-safe baking dish; top with black beans and sofrito. Cover loosely; microwave on MEDIUM (50% power) 10 minutes or until thoroughly heated.
  2. Meanwhile, place water and olive oil in medium saucepan. Cover and bring to boil on high.
  3. Stir rice and salt into boiling water. Cover, remove from heat, and let stand 5 minutes.
  4. Break pork roast apart, using two forks. Stir until blended; microwave on HIGH 2 more minutes to blend flavors. Peel onion and slice thinly. Fluff rice with fork. Spoon pork and black beans on rice; top with onions. Serve.
  5. Zesty Herb Salad
    1. Place salad blend in salad bowl. Chop cilantro leaves coarsely; add to salad. Cut pepper into thin strips (discard seeds); add to salad with tomatoes, carrots, and bacon.
  6. Squeeze juice of one half lime (1 tablespoon) into small bowl; whisk in salad dressing until blended. Add to salad; toss well to blend. Serve.
