A spicy, hot and intense sauce well suited to grilled chicken or fish. This one has chutzpah!

Red Sauce

Serves: 1 batch
Ingredients
  • 4 slices bacon
  • 2 Tablespoons olive oil
  • 10 cloves garlic; chopped
  • 1 large onion; chopped
  • 1 Tablespoon crushed dried chiles
  • 3 small fresh hot red chiles, sliced into thin rings
  • 1 large bell pepper; seeded and chopped
  • 4 large tomatoes; chopped
  • 1/2 teaspoon mixed dried herbs, such as thyme, savory, rosemary, and marjoram
  • 1 Tablespoon sugar
  • 1/2 Cup dry red wine
  • salt and freshly ground black pepper, to taste
Instructions
  1. In a large, heavy skillet, fry bacon until crisp. Remove from pan and set aside.
  2. Heat olive oil in pan, then add garlic and onion. Saute gently until onion is soft but not browned (2 to 3 minutes).
  3. Add remaining ingredients and bring to a boil, stirring frequently. Reduce heat to simmer and cook until a thick sauce results (about 45 minutes).
