A superb puree useful for desserts, pastries or as a sauce for ice cream or other frozen desserts.

Serves: 1 batch
- 2 10 ounces packages frozen raspberries, defrosted and drained
- 2 Tablespoons superfine sugar
- 1 Tablespoon Kirsch or other cherry-flavoured Brandy
- Rub the raspberries with the back of a large spoon through a fine sieve set over a mixing bowl. Stir in the sugar and kirsch, cover tightly with plastic wrap and refrigerate until ready to serve.
