This Greek version of tomato sauce is quick, and very flavorful.

Quick Tomato Sauce

Serves: 1 Cup
Ingredients
  • 1 Tablespoon butter
  • 1 Tablespoon flour
  • 1 Cup tomato sauce
  • 1 green onion
  • 1 slice green pepper
  • 1 stick cinnamon
  • 1 cloves garlic
  • zest of 1/4 lemon
  • sugar and salt, to taste
Instructions
  1. In a small, heavy-bottomed saucepan over medium heat, melt butter. With a wooden spoon stir in flour until mixture is bubbly and lightly browned (about 3 minutes). Add the remaining ingredients and bring to a boil.
  2. Reduce heat and simmer, stirring occasionally, until flavors are blended (10 to 15 minutes).
Notes
NOTES: Variation - Omit tomato sauce. Preheat oven to 350 degrees. Cut peppers in half crosswise and remove seeds and ribs. Fill each half with meat mixture. Arrange pepper halves, filling side up, in a baking dish in which they fit snugly. Add 2 cups beef stock, heated, to the dish and bake 45 to 50 minutes. Yield: 1 cup.

Strain sauce and serve hot.
