This may well be a side dish in most homes, but makes an exceptional main course for vegetarians when served along side simple pita bread or Naan.

Pureed Vegetables
Recipe type: Vegetables
Serves: 6
  • 1/2 Cup yellow split peas
  • 3 Tablespoons oil
  • 1 1/4 pounds spinach, washed
  • 1 large potato, peeled and diced
  • 1 medium onion, coarsely chopped
  • 4 medium tomatoes, chopped
  • 5 each fresh green chiles
  • 1 teaspoon salt
  1. Wash split peas well and leave to soak for 1 hour. Drain.
  2. Heat oil in a large pot over medium-high heat. When hot, put in all the ingredients plus 3 Cups water.
  3. Bring to a boil, cover, reduce heat and cook 1 hour. Remove lid, raise heat to high and boil rapidly for 20 minutes.
  4. Pour the resultant stew-like dish into a blender and blend till smooth.
