This is a wonderful, simple vegetable sauce for pasta. Goes very well over papardelle, angel hair or thin spaghetti, served with crusty bread on the side and a glass of Chianti or Frascati.

Primavera-Marinara Sauce

  • 2 onions, small, chopped
  • 1 teaspoon olive oil
  • 4 cloves garlic, crushed
  • 28 ounces tomatoes, crushed
  • 16 ounces tomato sauce
  • 2 Cups small broccoli flowerets
  • 2 Cups small cauliflower flowerets
  • 2 carrots cut in diagonal slices
  • 1 Tablespoon parsley, dried
  • 2 teaspoons leaf basil, dried
  • 2 teaspoons leaf oregano, dried
  1. 1. Cook onion in oil in large nonstick skillet until softened, about 6 minutes.
  2. Add garlic, crushed tomatoes, tomato sauce, broccoli, cauliflower, carrots, parsley, basil and oregano. Bring to boiling. Lower heat; partially cover and simmer 30 minutes.
  3. Serve 1/2 cup sauce over 1 cup cooked pasta.
