One may serve Potato Pancakes German Style for breakfast, brunch, lunch, dinner or as either a side dish or an appetizer. They’re simply marvelous with applesauce and/or sour cream.

Potato Pancakes German Style
May be served as either a breakfast/brunch dish or as a side dish with dinner. Either way, these delicious pancakes are a treat.

Serves: 4
  • 2 1/2 Cups potatoes; (2 large) *
  • 3 Cups water
  • 1 teaspoon lemon juice
  • 1 potato; boiled, mashed
  • 1 egg; large, beaten
  • 2 Tablespoons milk
  • 1/2 teaspoon salt
  • vegetable oil; as needed
  1. Grate raw potatoes into water to which lemon juice has been added.
  2. Place potatoes in a strainer or cheese cloth and drain off liquid. Drain well.
  3. Beat raw and cooked potatoes with egg, milk, and salt to form a batter.
  4. Using 3 Tablespoons oil for each batch, drop batter for 3 or 4 pancakes at a time in hot oil in a large frypan.
  5. When firm on the bottom side, loosen edges and turn. Brown on other side.
  6. Remove, drain on paper towel, and keep warm. Continue until all batter is used.
  7. Serve immediately.
* Potatoes are grated on medium grater. 2 1/2 Cups approximately.

If potato cakes are served with meat, sprinkle with salt and serve with sour cream and chives.

Sprinkle with confectioner's sugar if served with applesauce for breakfast or brunch.
