Potato Cheese Puffs

Serves: 6 to 8
  • 2 egg yolks; beaten
  • 1 1/3 Cups mashed potato
  • 3 Tablespoons hot milk
  • 1/3 Cup grated Cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon finely-minced onion
  • 1 teaspoon chopped green pepper
  • 2 egg whites; stiffly beaten
  • 1 1/2 Tablespoons butter; melted
  1. Preheat oven to 350 degrees. Combine egg yolks, potato, milk, cheese, salt, paprika, celery salt, onion, and green pepper. Mix well. Fold in beaten egg whites.
  2. Drop in mounds on a greased cookie sheet. Brush with melted butter. Bake for 20 minutes. Serve hot.
This recipe yields 6 to 8 servings.
