Yes, these are THE onions found in cocktails and far superior to any bartenders will usually use from a jar. In fact, if you go to a bar, demand they use this recipe. Outrageously fine flavor adds so much to a good cocktail.

Pickled Cocktail Onions
Recipe type: Pickles
Serves: 4 half-pints
  • 4 Cups pearl onions - approximately
  • 2 pounds Cup
  • 3 Tablespoons salt
  • 1/4 Cup sugar - plus 2 Tablespoons
  • 1 Tablespoon whole mustard seeds
  • 3 Cups white vinegar (5% acidity)
  • 4 small hot red peppers
  1. Cover onions with boiling water; let stand 2 minutes. Drain. Rinse in cold water and peel.
  2. Sprinkle salt over onions in a medium bowl. Add water to cover onions. Cover and let stand 10 to 24 hours. Drain onions, and rinse well.
  3. Combine sugar, mustard seeds, and vinegar in a heavy saucepan. Bring to boil; reduce heat and simmer, uncovered, 15 minutes.
  4. Pack onions and 1 red pepper into hot, sterilized half-pint jars. Cover with hot liquid, leaving 1/2-inch of headspace.
  5. Remove air bubbles; wipe jar rims.
  6. Cover jars at once with metal lids, and screw on bands. Process in boiling water bath 10 minutes.
  7. Yield: 4 half-pints.
