Liver meatballs are a European tradition that never caught on well in North America. Nevertheless, it is a very tasty dish. Those who enjoy liver will truly relish this interesting meatball preparation.

Pembrokeshire Faggots (Meatballs)
Recipe type: Budget Cooking
Serves: 4
  • 1 1/2 pounds pig's liver
  • 3 ounces suet
  • 1 or 2 teaspoonfuls sage (chopped)
  • 1/4 teaspoonful pepper
  • 4 ounces breadcrumbs
  • 2 large onions
  • 2 teaspoonfuls salt
  1. Mince raw liver and onions into bowl. Mix with bread crumbs, suet, salt and pepper and sage thoroughly. Form into small balls. Bake in a moderate oven for about 30 minutes; pour boiling water into tin to form gravy.
This savoury dish was popular in Pembrokeshire in the 18th Century.

Traditionally faggots are served hot with peas.
