Simply wonderful to make for the winter. Deliciously decadent, Pears in Brandy is wonderful served with ice cream.
Pears in Brandy
Flaming the brandy removes most of its alcohol. The brandy interacts with the sugar and butter to make a delicious sauce.

- 2 teaspoons butter
- 6 firm ripe winter pears such as Bosc; unpeeled, cut in half lengthwise, cored, then thinly sliced
- 2 Tablespoons organic sugar or brown sugar
- 3/4 Cup Brandy
- Heat butter in skillet over medium-high heat. Add pear slices; cook until lightly browned on one side, 3 to 5 minutes.
- Turn slices to cook 2 minutes longer; sprinkle with sugar. Add brandy. Ignite and swirl pan until flames subside.
- Serve immediately.
This is good spooned over slices of angel food cake or scoops of rich ice cream.
