Peaches are amazing fruits. A cousin of the cherry, they can be sweet or tart, dry or juicy, but always tasty. While most assume they’re a dessert fruit, they’re equally delicious in salads. Our Peach Salad is a gem.

For an interesting twist, add grilled chicken, steak, scallops or shrimp.

Ingredients
  • 3 peaches, fresh, washed and dried, large, sliced into thin wedges (3/8- to 1/2-inch thick)
  • 1/2 Cup nuts (walnuts, pecans, almonds, hazelnuts or macadamias)
  • 5 ounces (1 Cup) arugula salad mix or baby spinach
  • 1/2 Cup crumbled blue cheese, or smoked Gouda
  • 1/2 Cup red onion, thinly sliced (optional) or
  • 1 shallot, peeled and thinly sliced
Dressing
  • 1/4 Cup olive oil
  • 2 Tablespoons white balsamic vinegar
  • 1 Tablespoon honey
  • 1 Tablespoon Dijon mustard
  • salt
  • white pepper to taste
Instructions
  1. Add the oil, vinegar, honey and mustard to a jar with a lid. Add the shallot and season with salt and pepper. Close the jar and shake until combined.
  2. Layer the peaches, nuts, cheese and greens in a large bowl. Pour the dressing over the top, then toss until everything is coated. Transfer to a serving bowl and serve immediately.
