- 3 ounces cooked and shelled mussels
- 1 ounce carrot
- 4 ea egg yolks
- 1 pinch mixed herbs
- 1 pinch crushed garlic
- 1 seasoning
- 1 ounce celery
- 1 ounce breadcrumbs
- 2 ounces herring roe
- 1 pinch dill weed
- Brandy and double cream to taste
- Finely mince mussels, vegetables and herring roe. Add herbs, seasoning and breadcrumbs.
- Blend well with egg yolks, brandy and cream. Cook for 1/2 hour at 350 degrees F. in a [url href="https://www.epicurus.com/Glossary/bain-marie-5/41491">Bain-marie[/url] in the oven. Cook and serve with toast fingers.
