Serves: 4 servings
  • 6 potatoes (Russet or Yukon Gold)
  • 2 Tablespoons oil
  • 1 Tablespoon parsley; chopped
  1. Preheat oven to 350 degrees F.
  2. Peel potatoes and slice for French fries.
  3. Lay the pieces on paper towel, pat dry.
  4. Potatoes should be as dry as possible.
  5. Place potatoes in a large bowl and drizzle with oil, tossing to coat evenly.
  6. Lay in a single layer on a large baking sheet; sprinkle parsley over all.
  7. Bake for 25 minutes, then flip over only once. Return to oven and increase temperature to 450 degrees F.
  8. Bake 3 to 5 minutes longer until potatoes are tender and start to brown. Cook to desired doneness.
