  • 6 Cups medium-sized tart, red-skinned apple, core but do not peel and dice
  • 2 Tablespoons orange juice
  • 1 1/2 Cups red grapes; halved and seeded
  • 1 celery stalk; thinly sliced
  • 1/2 Cup coarsely chopped toasted walnuts; * see note
  • lettuce leaves
  • orange slices; for garnish
Orange-Yogurt Dressing:
  • 1/3 Cup plain yogurt
  • 1/3 Cup mayonnaise
  • 1 Tablespoon brown sugar
  • 1 Tablespoon grated orange rind
  • 1/8 teaspoon ground nutmeg
  1. To prepare salad: combine apples, orange juice, grapes, celery, and walnuts in a mixing bowl; set aside.
  2. To prepare Orange-Yogurt Dressing: mix yogurt, mayonnaise, sugar, orange rind, and nutmeg in a small bowl; mix until smooth. Mix dressing with salad mixture. Cover. Refrigerate for 1 to 3 hours.
NOTES: To toast walnuts, spread in a shallow pan. Bake in a 350 degrees oven until lightly browned (8 to 10 minutes).

Yield: 6 to 8 servings. Dressing Yield: 2/3 cup.

Serve in a lettuce-lined bowl or lettuce leaves on individual plates. Garnish with orange slices.
