- 2 ounces clarified butter
- 1 1/2 pounds Nantucket Cape scallops (or sea scallops)
- salt and black pepper, to taste
- Heat butter in sauté pan until it just begins to smoke.
- Place scallops seasoned with salt and pepper in pan in a single layer so that they are not touching each other.
- Let scallops sear and caramelize for a minute or so before turning.
- Cook for an additional minute (total cooking time approximately 3 minutes).
