  • 2 ounces clarified butter
  • 1 1/2 pounds Nantucket Cape scallops (or sea scallops)
  • salt and black pepper, to taste
  1. Heat butter in sauté pan until it just begins to smoke.
  2. Place scallops seasoned with salt and pepper in pan in a single layer so that they are not touching each other.
  3. Let scallops sear and caramelize for a minute or so before turning.
  4. Cook for an additional minute (total cooking time approximately 3 minutes).
