  • 2 Cups mashed cooked pumpkin (or one 15-ounce can)
  • 2 Cups whole milk
  • 3 large eggs
  • 1/2 Cup light brown sugar (packed)
  • 1/2 Cup molasses
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon freshly ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon Kosher salt
  • 1 ten-inch pastry shell with edges crimped high
  1. Preheat oven to 400 degrees F.
  2. Combine pumpkin, milk, eggs, brown sugar, molasses, cinnamon, ginger, nutmeg, allspice and salt. Beat until well blended.
  3. Pour into pastry shell.
  4. Bake until center is almost firm, about 50 to 55 minutes.
  5. Let cool before slicing with a warm knife dipped in hot water.
  6. Use a spatula or pie server to serve each slice.
  7. May be accompanied by whipped cream or ice cream if desired.
