This quick and easy recipe for homemade Mayo is wonderful if you prefer the fresh, delicious flavor of the real thing. Far superior to anything found in a jar.

Mayonnaise II

Serves: 2
  • 2 egg yolks
  • 1 teaspoon salt
  • 1 garlic clove, minced
  • 1/2 Cup green onions, chopped fine
  • 4 shots Tabasco sauce
  • 1 juice of 1/2 lemon
  • 2 Cups high-grade vegetable oil
  1. Place all the ingredients except the oil in a blender (with the center of the lid removed) or a food processor fitted with a plastic blade and blend or process for 2 minutes. Pour the oil in a very thin stream through the top or down the feed tube until it has all been incorporated. Blend or process for 30 seconds more.
  2. Makes about 2-1/2 cups.
