This low-fat recipe works very well with most meats or vegetables. Great for grilling.

Marinade for Meat and Vegetables

Serves: 6
  • 2 Tablespoons tamari or
  • 2 Tablespoons low-sodium soy sauce
  • 5 Tablespoons water
  • 1 Tablespoon dry Sherry, or to taste
  • 2 Tablespoons apple juice concentrate
  1. Here is a good marinade sauce that's low in salt and cholesterol.
    1. Combine ingredients in a small bowl.
  3. Use as a marinade.
  4. Makes 3/4 cups.
    Add 1 teaspoon fresh grated ginger root, 1/2 to 1 teaspoon fresh minced garlic, 1/2 to 1 teaspoon grated orange rind, 1/2 teaspoon Dijon style no-salt added mustard, 1/4 teaspoon sesame oil or 1/4 teaspoon hot chili oil.
  6. To thicken marinade to be use as gravy, combine 1 teaspoon cornstarch or arrowroot and 2 tablespoons cold water. Combine marinade and cornstarch mixture in a small saucepan and heat until bubbly.
Tamari and soy can add substantial salt to your recipe. If you have high blood pressure, substitute low-sodium soy or Worcestershire sauce.
