  • 4 ounces butter
  • 1 onion, diced
  • 2 teaspoons garlic, minced
  • 1 green onion, sliced
  • 1/2 Cup parsley, chopped
  • 1/2 Cup ham, diced
  • 1/2 Cup button mushrooms, chopped
  • 1 Tablespoon fresh thyme
  • 1 Cup Bourbon
  • 4 ounces flour, all purpose
  • 5 Cups beef stock
  • 1/4 Cup Worcestershire sauce
  • salt, to taste
  • black pepper, to taste
  1. In a heavy-bottomed saucepan, melt the butter over medium heat. Stir in the onion, garlic, green onion and parsley and cook for about 1 minute.
  2. Mix in the ham, mushrooms and thyme and sweat, mixing occasionally, for about 5 minutes or until the mushrooms are cooked through.
  3. Deglaze with bourbon, reduce until almost dry.
  4. Mix in flour, then whisk in beef stock and Worcestershire. Bring to a boil, lower to a simmer, cook until the flour is cooked out and the stock has thickened, about 15-20 minutes.
