The name is deceptive as these are not pickled limes but cucumber pickles made with lime juice as the primary acid. Full of great lime flavor, the pickles are crunchy and delectable. Great with barbecue.

Lime Pickles
Recipe type: Pickles
Serves: 6
  • 7 pounds pickling cucumbers *
  • Vinegar Mixture:
  • 2 Quarts of vinegar
  • 3 teaspoons salt
  • 4 1/2 pounds of sugar
  • 1 teaspoon celery seed
  • 1 teaspoon cloves
  • 1 teaspoon mixed spices
  • 2 Cups of lime juice
  1. Soak cucumbers for 24 hours in the 2 Cups of lime juice and 2 gallons of water.
  2. Rinse well in ice water several times. Cover with cold (ice) water and soak for 3 hours. Drain and cover with vinegar mixture (vinegar, salt, sugar, celery seed, cloves and mixed spices).
  3. Let stand overnight in this mixture, then boil mixture and pickles for 35 minutes.
  4. Seal in sterilized jars.
Use freshly squeezed lime juice, not bottled which is too bitter and acidic for this recipe.
