This sauce falls just short of being classified as a marmalade, but remains a wonderful sauce as a topping for chocolate desserts such as mousse, cake or puddings.

- 12 kumquats
- 1 1/2 Cups orange juice
- 1 1/2 ounces sugar
- 1. Wash and slice kumquats into fine, thin slices; add the orange juice and the sugar and cook for about 10 minutes.
- Let cool and serve with Mousse au Chocolat.
