Jicama Slaw

Jicama Slaw
  • 2 pounds jicama; peeled, julienned
  • 1/2 Cup red bell pepper; julienned
  • 2 carrots; julienned
  • 1/2 small red cabbage; shredded
  • 1 Tablespoon minced jalapeno
  • 1/4 Cup Citrus Vinaigrette; see * note
  1. Combine all ingredients and season to taste with salt and pepper.
