This spicy cream sauce adds a refreshing flavor to many dishes. We found it wonderful over roast chicken and rice or tortellini. Be inventive!

Jalapeno Cream Sauce

Serves: 4
  • jalapeno peppers *
  • 1 clove garlic; finely chopped
  • 2 teaspoons vegetable oil
  • 1/8 teaspoon salt
  • dash of pepper
  • Quick Creme Fraiche:
  • 1/3 Cup whipping cream
  • 2/3 Cup dairy sour cream
  1. * Jalapeno peppers should be seeded and finely chopped. You should use no more than 2 depending on how hot you want it.
  2. Cook chile(s) and garlic in oil over low heat, stirring frequently, until tender, about 4 minutes. Remove from heat; stir in remaining ingredients including the creme fraiche.
  3. Makes about 1 1/4 cups of sauce.
  4. QUICK CREME FRAICHE: Gradually stir whipping cream into sour cream. Cover and refrigerate up to 48 hours.
For a smoky flavor, use half jalapeno and half chipotle.

May be used as a garnishing sauce or to glaze foods like chicken or pastas. Great on poached eggs too!
