Italian Chicken with Noodles

  • 2 chicken breasts
  • 1/2 teaspoon oregano
  • 1/8 teaspoon pepper
  • 1 onion, chopped
  • 4 ounces mozzarella cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 Cup butter
  • 1 Cup chicken broth
  • 8 ounces egg noodles
  1. Debone, skin and split the chicken breast in half.
  2. Cut the meat into 2x1/4 inch strips. Sprinkle with lemon juice, oregano, basil, salt and pepper.
  3. Melt butter in pan add chicken and onion. Cook until browned, about 5 to 7 minutes. Add chicken broth, reduce heat, cover and cook 10 minutes longer. Add cheese, cover and cook until melted.
  4. Serve over hot noodles.
