Irish Potato Griddle Cakes are small pancakes that make a superb side dish with roasts or stews. If you want them for breakfast, serve with applesauce, not syrup.

  • 1/2 pound raw potatoes
  • 1/2 pound mashed potatoes, cooked
  • salt and pepper to taste
  • 1/2 pound all-purpose flour
  • 1 egg
  • milk
  1. Grate raw potatoes.
  2. Stir into mashed potatoes.
  3. Add salt, pepper and flour.
  4. Beat egg and add just enough milk to make a batter that will drop from a spoon.
  5. Drop by Tablespoonful onto a hot griddle or skillet.
  6. Cook over moderate heat for 3 to 4 minutes on each side.
