A superb recipe for breakfast, brunch, lunch or a meatless main course for dinner. Without a doubt, this great recipe is enhanced by the combination of beer and spicy English mustard. A winner!
- 10 slices day-old bread, about 1/2 inch thick
- 7 ounces Cheddar cheese
- 5 Tablespoons beer
- 1 Tablespoon English made mustard
- 1/2 teaspoon pepper
- 1/2 Cup unsalted butter
- Trim the crusts from the slices of bread and make them into neat rectangles. Toast them lightly on both sides; keep warm. In a skillet over low heat, cook the sliced cheese with the beer and mustard, stirring constantly to prevent boiling. Season with pepper.
- Quickly butter each slice of toast and pour a tablespoon of the cheese mixture over it. Serve very hot.
