A superb recipe for breakfast, brunch, lunch or a meatless main course for dinner. Without a doubt, this great recipe is enhanced by the combination of beer and spicy English mustard. A winner!

Ian's Welsh Rarebit

Ian's Welsh Rarebit
Recipe type: Cheese
Serves: 10
  • 10 slices day-old bread, about 1/2 inch thick
  • 7 ounces Cheddar cheese
  • 5 Tablespoons beer
  • 1 Tablespoon English made mustard
  • 1/2 teaspoon pepper
  • 1/2 Cup unsalted butter
  1. Trim the crusts from the slices of bread and make them into neat rectangles. Toast them lightly on both sides; keep warm. In a skillet over low heat, cook the sliced cheese with the beer and mustard, stirring constantly to prevent boiling. Season with pepper.
  2. Quickly butter each slice of toast and pour a tablespoon of the cheese mixture over it. Serve very hot.
