Hot Wheat Cereal with Gingered Peaches

Serves: 4
  • 4 1/2 Cups water
  • 3/4 Cup farina wheat cereal
  • 1 1/2 Cups apple juice
  • 1 Tablespoon ginger, fresh grated
  • 4 peaches, peel/pit/sliced
  • 1/4 Cup raspberry vinegar
  • 3 Tablespoons honey
  • 1/2 teaspoon cinnamon, ground
  • 12 blackberries
  1. To make the farina: In a medium saucepan over medium-high heat, bring the water to a boil. Stir in the wheat cereal. Reduce heat to low immediately. Simmer, stirring frequently, until thickened, about 10 minutes.
  2. To make the gingered peaches: In a small pan over high heat, combine apple juice, ginger and peaches. Bring to a boil, then reduce the heat to low. Simmer until the liquid is reduced by half, about 10 minutes. Add the vinegar, honey and cinnamon. Increase the heat to medium-high, bring to a boil. Reduce heat to low and simmer until the peaches are tender, about 5 mins. Divide cereal into 4 bowls. Top each with 1/4 of the gingered peaches and 1/4 of the blackberries.
Though this sounds like more of a winter dish, in fact, it can be made through most of the year. Substitute blackberrries with blueberried, raspberries or strawberries as available.
